Frozen Themed Birthday Cake

For my niece’s fifth birthday she asked for an Elsa cake. I briefly contemplated making one of those Barbie doll cakes. You know what I’m talking about, right? The bowl skirt with a Barbie doll shoved inside? But I wasn’t really feeling it so I poked around on Pinterest and found a few cute ideas that I incorporated into one cake.

I wanted Elsa in her ice castle so made some hard candy and broke it into shards. It was a little thick and most of the shards were pretty small but I made it work. Just simple water, sugar and corn syrup boiled to 300 degrees F and voila you have ice.

I started making the snowflakes with white chocolate but I knew that wouldn’t work after a few tries. It was so hot the chocolate never would have set well and would have melted right off the cake so on to plan B, royal icing. I really like how they turned out, other than the points I had after lifting the piping bag. I also sprinkled them with a little bit of white sprinkles to try and get a little sparkle to the flakes.

I also wanted the inside to look special so made ombre layers. It was supposed to be blue but turned out more green, but hey, it still looked good and tasted good too. I made my usual buttercream frosting and a wonderful lemon filling.

The final touch were the toys. I don’t think I have the talent to make anything that looks nearly as cute as those toys. Bonus, my niece gets to keep and play with them.

I think this is one of the prettiest cakes I’ve made and loved that it turned out pretty close to how I had it pictured in my head.
