Texas Hashbrowns

This has to be one of our favorite potato dishes and has been in the family for years. I like serving this with meatloaf because I don’t need gravy. It’s actually pretty good with anything, pork, poultry, or beef. Not only is it an easy dish to make but it uses basic pantry items that you probably already have on hand.

There have been times when I’ve cubed up a few potatoes and used those in place of the Southern hash browns.

Beats me why they are called Texas Hashbrowns, maybe because they are over the top with BIG flavor?

Texas Hashbrowns

1 2 pound package frozen hash brown potato (southern style), thawed
1/2 cup onion chopped
1 (10 3/4) ounce can cream of mushroom soup
1 (10 ounce) package cheddar cheese, shredded
1/4 to 1/2 cup butter or margarine, melted
1/4 teaspoon pepper
12 ounces sour cream

Mix ingredients together in large bowl. Place in 9×13 inch pan. Bake uncovered at 350 degrees for 40-45 minutes. Makes 8 servings.
