Cheesesteak Sandwiches

Here they are as I promised yesterday when I posted our latest farm share box goodies! I made them last night so I could absolutely take advantage of the fresh bread! The beef actually made more than enough for 4 fully stuffed sandwiches.

Speaking of beef. They provided me with beef already cut into stir-fry size pieces and I just needed to thinly slice those pieces. If you don’t have beef stir-fry just find a decent cut of beef and thinly slice it. You don’t have to use stir-fry, it’s just what they provided in the box this week.

Cheesesteaks

1 lb beef stir fry, cut crosswise into thin strips
2 green bell peppers, thinly sliced
1 large onion, thinly sliced
2 tsp olive oil
salt and pepper, to taste
grated cheese, I used gouda and pepper jack

Put beef in freezer about 15-20 minutes to get a partial freeze on it, helps to slice the beef easier. Cut beef into thin slices. Season beef with salt and pepper, as desired. In a skillet over medium-high heat, heat oil. When oil is hot cook peppers and onions until browned and beginning to soften. They should still maintain a little bit of firmness. Transfer vegetables to a bowl and add 1 tablespoon oil. Add beef and cook until the beef is cooked through and browned around the edges. This should only take about 5-8 minutes if the pieces are sliced thinly enough. Add peppers and onions and cook about 1 minute more to heat veggies back up. Take off heat.

In the meantime slice hoagie buns in half. I lightly buttered each half of the roll. Place rolls on a foil covered cookie sheet, cut side up, and place under the broiler for about 3-4 minutes. Just until butter is melted and edges slightly brown. Leave broiler on and take out rolls. Sprinkle grated cheese on one half of roll, put meat and veggie mixture on other half of roll. Sprinkle meat and veggie mixture with grated cheese, the more the merrier right?

Put under broiler for about 2 minutes or just until cheese is melted and starts to bubble slightly. Put rolls together and enjoy.
