Here’s something quick and easy that I made last night for dinner. You wouldn’t believe how easy or how quick making an Alfredo sauce is. I know the first time I did I was shocked. No more jars for me and it tastes so much better too! This was one of my favorite dishes to order in the Italian restaurants in Germany. I still don’t have it down quite as good but it’s been so long since I’ve been there I probably wouldn’t recognize it if I did. So here’s my version of Tortellini with Peas and Ham.
Tortellini with Peas and Ham
1 lb frozen tortellini
1/2 cup frozen peas
1/2 cup onion, chopped
1/2 cup ham, sliced thin
4 Tbls butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
1/2 tsp freshly cracked black pepper
Bring large pot of water to boiling, add salt if desired.
Heat 4 tablespoons butter in medium non-stick skillet over medium heat. Add onion and ham and saute until onion is tender. Add garlic and saute for an additional minute.
Add tortellini to pot of boiling water and stir occasionally. Cook until tortellini is almost done. Add peas and stir. Boil for an additional 2-3 minutes. Remove from heat and drain.
Add cream to onion and ham mixture in skillet and simmer for 5 minutes, stirring occasionally. Add Parmesan cheese and 1/2 teaspoon cracked black pepper and whisk until cheese is melted. Remove from heat. Add tortellini to mixture and stir until pasta is well coated.
Makes 4 servings.
Which reminds me that I need to make Fettuccine Alfredo with Shrimp for my nephew soon. We ate at a Greek/Italian restaurant a while back and his pasta was floating in a sea of Alfredo sauce. Not appetizing looking at all. Not to mention the shrimp were those tiny frozen cocktail shrimp. I told him I could do better and would invite him over some weekend. Guess I should do that huh?
