Peanut Brittle


I let Christmas pass me by without making my mom her favorite Peanut Brittle so I made some up quick tonight before heading out to hang with the family for New Years.  Believe it or not it is made in the microwave and is done in less than 10 minutes…minus the cooling time of course.

I wouldn’t normally cook anything in the microwave, especially candy, but this truly does make perfect brittle every time.

Peanut Brittle

1 cup sugar

1/2 cup light corn syrup

1 cup peanuts (I give mine a rough chop)

1/2 tsp salt

1 tablespoon butter

1 teaspoon baking soda

1 teaspoon vanilla

Mix sugar, corn syrup, peanuts and salt in small heavy duty glass bowl. Cook on HIGH in microwave for 4 minutes. Add 1 tablespoon butter; stir well. Microwave another 3 1/2 to 4 minutes (mixture will be light golden color, if your microwave is not very high heat you may need another 30-60 seconds). Immediately add baking soda and vanilla. Stir quickly. Mixture will froth up. Pour onto metal pan and spread evenly. Cool and break into pieces. (If it is a little chewy you need to make sure you cook it a little more the next time; microwaves differ in heat settings).

There is no need to butter or grease the metal pan. It breaks right off when cooled.
